The Main Ingredient for this recipe is the Chickpea also known as the Garbanzo Bean which is part of the Legume Family. They have a bit of a nutty taste and grainy texture and pair well with most foods.
I think the most important part of this Chickpea Crostini Recipe is picking the right bread. I found a small Fresh Baguette at Traders Joe's which is basically a French Bread which worked out perfectly but if you don't have a Trader Joe's in your neighborhood just try to find a fresh long thin loaf of French Bread.
Ingredients and Substitutions:
Here is your shopping list:
- ¼ Cup of Chickpeas
- 1 Tablespoon Sun Dried Tomatoes in Olive Oil - you can use diced plum tomatoes or cherry tomatoes as well for a vegan bruschetta crostini.
- ½ Small Garlic Clove diced - I used Freeze Dried Garlic since I did not have fresh garlic on hand and that worked great.
- A Pinch of Salt
- A Pinch of Red Pepper Flakes
- 2 Tablespoons of Water
- 1 Teaspoon of Fresh Chopped Mint - I grow my own in the garden you should try it fresh herbs are the best. Fresh Basil is also a nice herb with a slice of mozzarella for a Caprese Crostini - you can make so many quick and easy variations.
- French Bread
- ½ Teaspoon of Olive Oil
- A Pinch of Black Pepper
Preparation Instructions:
How to prepare your healthy crostini appetizers:
Step 1- Combine the Chickpeas, Sun Dried Tomatoes, Garlic, Salt, Red Pepper Flakes and water in a small skillet; Bring to a gentle simmer over low heat. Cook stirring occasionally until mixture is warmed through for about 3-5 minutes ; Remove from heat.
Step 2 - Pour Half of the Ingredients from your skillet into a bowl and smash with a fork or if you have a mini food processor you can add the mix into that and blend gently which is what I did.

Step 3 - Slice your French Bread and toast your slices so they are firm and have a nice crunch. I toasted mine in my Airfryer for a couple of minutes but you can use a toaster or oven to crisp them.
Step 4 - Spread your Chickpea mixture over your toasts; first use the smooth mix then add your unmixed sautéed chickpeas; drizzle with Olive Oil, sprinkle with black pepper ; add some fresh chopped mint and enjoy!!

Yes crostini can be frozen. To freeze crostini, slice the bread and lightly oil both sides. Then place in an airtight container in the freezer (before baking). When ready to serve, you can bake them without thawing in a 400-degree oven for about 10 minutes or air fry them for 5 minutes at 360 degrees.
