What Exactly is Quinoa?
Quinoa is a protein packed grain similar to Cous Cous but has a richer nuttier flavor and is said to be one of the healthiest and most nutritious foods on the planet....can you believe?
Are you a Weight Watcher?
If you follow the Weight Watchers Program One serving of TriColor Quinoa is 5 points which is equal to ¼ Cup. Carrots and Peppers are Zero Points so this Instant Pot Veggie Quinoa Recipe will be 5 points a serving. I do see that Vigo Organic Whole Grain Tri Color Quinoa is only 4 points so to cut a point you might want to try that one.

Another great kitchen tool I use is the Mini Ninja Chopper it is great for chopping the carrots and peppers or any Raw Veggie. It is super easy to use and simple to clean and most important your mincing is complete in seconds.
1: Rinse your Quinoa under Cold Running Water with a Fine Mesh Colander
2: Spray your Instant Pot liner with Olive Oil Spray then add in your One Cup of Rinsed Quinoa with One Cup of Reduced Sodium Chicken Broth and the Minced Carrots and Peppers
3: Lock your Lid and set your valve to the sealing position
4: Select pressure cook for 1 minute on high pressure
5: It will take about 5 minutes for the pressure to build, then the countdown timer will start. Allow the pressure cooker to release naturally for 10 minutes and then release any remaining pressure before opening your lid.
6: Now fluff with a fork and serve!Print
