Hello friends! It's been an extremely frigid week here in New York so I thought lets try a nice quick easy vegetable soup recipe but of course I want to keep it healthy and I want it to taste good so not so easy right?
I browsed through some of my magazines, searched the web, started flipping through the Instagram feed and nothing was really jumping out at me but then I am sitting at my dressing table getting ready for the day watching my little TV and this show comes on called the Urban Vegetarian and this cute pretty girl, #desireenielsenrd, starts whipping up these amazing looking vegan meals... she had me mesmerised.
What do you think she starts cooking...that's right a most amazing looking Vegetable Soup with Swiss Chard and lots of other goodies so I watched closely and I think I recreated it pretty good, so here is the recipe.
Swiss Chard Vegan Soup Recipe Ingredients
- 1 Bundle of Swiss Chard
- 2 Onions
- 3 Cloves Garlic
- 1 package of Baby Potatoes
- 32 ounces of Vegetable Broth
- 1 Tomatoe
- 1 can of Chickpeas
- Spices - Turmeric, Paprika & Cinnamon (To Taste, I like it spicy)
Preparation Instructions:
Step 1 - In a large stock pot I added some olive oil. I then cut the leaves off the Swiss Chard and put them to the side. Next dice up the stems of the Swiss Chard Leaves. Then chop the onions, potatoes and tomatoes and put all of the diced veggies into the pot to saute for about 15 minutes. I then added the broth, chickpeas and the leaves of the Swiss Chard and added the spices and let everything simmer for about a hour......smelled so good.
It was really delicious, not your typical vegetable soup, I believe the spices are what makes it unique; you have to try it.
Oh and I expected it to be nutritious so I did a little search to identify the benefits of Swiss chard, as this is the main ingredient.
They say that a small serving of Swiss Chard covers your daily requirements for Vitamins A, K & Vitamin C. Swiss Chard is packed with Antioxidants and full of fiber, it also helps to lower blood sugar which works for me.

- Total Time: 1 hour and 30 minutes

A Super Quick and Easy Vegetable Soup
Ingredients
- 1 Bundle of Swiss Chard
- 2 Onions
- 3 Cloves of Garlic
- 1 Package of Baby Potatoes
- 32 Ounces of Vegetable Broth

Instructions
- In a large stock pot add 2 teaspoons of Olive Oil.
- Cut the leaves off of the Swiss Chard and put them to the side.
- Dice the stems of the Swiss Chard
- Chop your Onions, Potatoes and Tomato and put them in your pot and saute for about 15 minutes.
- Add the Broth, Chickpeas, Swiss Chard and spices to your pot and let everything simmer for about one hour.
- Ready to serve!
