I love browsing through recipes on Pinterest and I keep seeing photos of these Jack-Jack Cookie Num Nums and they look delicious.
Evidently this is a cookie they sell at Disneyland which I have never been too which is probably why I have never heard of such a cookie but clearly I have been missing out on an amazing treat.
I read through a couple of the recipes online and could see this cookie was not exactly low calorie or healthy in anyway so I figured I would swap in Almond Flour in place of the All Purpose Flour and swap in Swerve in place of the granulated sugar and see what happens.
They tasted amazing but did not come out looking as pretty as all of the Pinterest images. I may have taken them out a couple of minutes too early and they sunk slightly in the middle but the flavor was perfect. Crispy on the outside and chocolaty chewy gooey in the middle. A healthy style Dessert Yum!
Here are the Ingredients I Used:
- 1 Cup of Cold Butter Cubed
- 1 Cup of Brown Sugar
- 1 Cup of Swerve
- 2 Eggs
- 2 Teaspoons of Vanilla Extract
- 2 ¾ Cups of Almond Flour
- 3 Tablespoons of Corn Starch
- 1 Teaspoon of Baking Powder
- ½ Teaspoon of Baking Soda
- ½ Teaspoon of Salt
- 1 Cup of Mini Chocolate Chips
- 1 Cup of Semi Sweet Chocolate Chunks
Preparation Instructions:
1 - Preheat Oven to 400 Degrees
2 - In a large bowl mix together Butter, Brown Sugar and Swerve for 3 minutes on Medium Speed.
3 - Add in Eggs and Vanilla Extract and continuing mixing.
4 - Mix in Almond Flour, Cornstarch, Baking Powder, Baking Soda and Salt until all incorporated.
5 - Add in Mini Chocolate Chips and ½ Cup of the Chocolate Chunks and finish mixing all together.
6 - Place Cupcake holders in baking pan.
7 - Pour ½ cup of dough into cupcake holders and then press down dough gently
8 - Press in a couple of the Chocolate Chunks to the top of each dough round.
9 - Bake for 10 minutes or until lightly golden brown.
10 - Let them cool for 5 minutes and then serve warm
